British Matthew Hayes, the head organic farmer of the Nyitott Kert (Open Garden) of Zsámbok, one of the pioneers of Hungarian organic farming, came to Hungary in 1995 and began dealing with organic farming in 1997 at the eductional farm of the Gödöllő University.

At present farming takes place on 3.5 hectares in a biodynamic, environmentally friendly manner: 1 hectare is a vegetable plot, 1,700m2 using extensive greenhouses and a smaller area for extensive orchards. Cultivation is done manually, aiming overall to minimalize machine usage, this way ploughing is performed in line with peasant traditions: using horses. The poultry stock counts 300 heads, manure is recycled into the cultivation. Their main certified organic produces are spinach, lamb’s lettuce (corn salad), mangold, celeriac, garlic and root vegetables.

A box-system is operated, and produce is sold on a weekly basis at the Csörsz Utca Organic Market and at the Szimpla Farmer’s Market.
