Cow cheese
András Székely’s farm can be found in the northern part of the Danube Bend in the Börzsöny hills, 5 km from the Danube river, between Szokolya and Kóspallag. The milk from which the cheese is produced is from their own Hungarian cattle stock. All processes are in András’s head and hands: from grazing and milk-processing to sales.
The animals graze in the Börzsöny hills, where the cool, moderately wet climate enables the development of an unique-tasting milk. The close proximity of the Danube and the relatively high altitude above sea level compared to Hungarian conditions elsewhere, the crystal clear springs and streams and the fresh air all contribute to the appearance of a distinct terroir. As the cows live in natural conditions, the taste of the cheese changes from season to season: flowers dominate spring and early summer cheese, at the end of summer and in autumn grasses and ripe fruits come through, whereas in the winter herbs among the hay flavour the cheese. The cattle do not receive any hormone treatment, milk-yield boosters or antibiotics. Thanks to the treatment of the animals they are active, play, with a resistant immune system, a clean and glossy coat. In winter, from the beginning of November to the end of February thy live in stables but on dry, sunny days they are in the open.
